CAFECAT GAZPACHO - A Perfect Food For Summer!
Try this FAMOUS Gazpacho Recipe! 

ASSEMBLE: Coarse dice 3 medium Vidalia onions and cover in 1 cup of vinegar. Mince fine 10 radishes, 4 cloves of garlic and 2 cucumbers (seeds removed) cover in 1/4 cup flax seed oil. Mince very fine  1/2 cup each of cilantro, parsley and chives, cover and toss with 1/4 cup of lemon juice-sprinkle with salt and fresh cracked pepper. Chop coarsely 3 lbs. of vine ripe- dark red, not pink- organically grown tomatoes. Prepare 2 quarts of juiced tomatoes, 1 juiced jalapeno pepper and 1 small can of V-8(You can omit this!).

COMBINE: Onion mixture with herb mixture, fold in all other non juice ingredients and lightly toss 'til evenly combined. Cover with tomato/V-8 juice and do not stir. Store 24 hours, refrigerated, stir only before serving; garnish with sour cream. Serve ice cold with a fresh sprig of mint and parsley!

ASSEMBLE: Coarse dice 1 medium Vidalia onions saute in olive oil until translucent-set aside. Mince fine a few sprigs of fresh parsley stir into onions. Take a bulb of fennel and slice diagonally in 1/8" slivers coat in balsamic vinegar. Chop coarsely 1 pound of country olives .COUNTRY OLIVES Take a large eggplant cut into 1/2" squares lightly salt and soak in water-then saute until golden brown. Set Aside. Add 2 Tablespoons of tomato paste to a cup of marinara tomato sauce,set aside. Saute 8 ounces of sliced mushrooms until gloden brown. Get two cloves of garlic thinly slivered.

COMBINE: In a large pot heat the onions. Add the garlic let it brown then stir in the fennel,add the mushrooms when the mixture is boiling. Now add the olives and sauce mixture.Add the eggplant last and let the mixture reach a boil for only one minute-add a dusting of sugar and a pinch of coarse salt. Stir gently and then remove from the heat. Divide and place in containers. It can be frozen and is best served cold.
